Mehebub always jokes when he eats banana bread, saying, "I don't get why you call it bread! It's totally cake!" And honestly, I'm not sure why either! What I do know is that banana bread tastes amazing. If you find yourself with overripe bananas that no one wants to eat, this recipe is a lifesaver. Plus, I like to make it healthy by using whole wheat flour.

My husband and our little one tend to create chaos, especially when I'm away. This time was no exception! I returned from a three-day office trip to Chennai to find a seriously messy house and, among other oddities, six overripe bananas. After cleaning up with my two helpers (read, the father-daughter), I decided to put those bananas to good use. I baked two fresh loaves of whole wheat banana bread. This marked my first Christmas baking adventure for 2014!

%Banana Bread

This banana bread, made with mashed bananas, is a lighter take on the traditional recipe. I've swapped out a few ingredients to reduce calories without sacrificing flavor. Instead of all-purpose flour, I use whole wheat flour, a healthier choice that also adds a delightful texture to the bread, thanks to its natural fiber. And to further cut calories, I've replaced butter with refined vegetable oil. The result? A delicious and guilt-free treat!

Ingredients

  • 2.5 cup Whole Wheat Flour can be replaced with All Purpose Flour
  • 3 Over Ripped Banana more the ripeness more the taste
  • 150 g Powdered Sugar 1 Cup
  • 2 Egg
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Vanilla Essence
  • 150 ml Refined Vegetable Oil can be replaced with Butter
  • 3 tablespoon Walnut optional

Prep Work

  • Use a fork to smash the bananas. Don't use a food processor because we want some chunks for a bread that has more crunch.
  • We need to mix the dry ingredient and the wet ingredient in separate bowls.

Mixing Dry Ingredients

  • Put the whole wheat flour, baking powder, and baking soda in a bowl and set it aside.
  • Sift it once or twice.

Mixing Wet Ingredients

  • Now, let's get the wet ingredient ready.
  • Add powdered sugar to the smashed bananas and mix well with a fork or spoon.
  • Then, pour in the oil and mix.
  • Add the eggs one at a time and mix everything together.
  • Now, add the vanilla.
  • Mixing Dry and Wet Ingredient Together
  • Mix one-third of the flour mix into the wet mix. After it's mixed well, add another part and mix. Finish by adding the last of the flour mix.
  • Add chopped walnuts to the mix.
  • Now the mix is ready to bake.

Baking Whole Wheat Banana Bread

  • Turn on the oven to 160 degrees C and let it heat up for 10 minutes before mixing everything.
  • Get a bread pan and grease it with oil, then dust it with a bit of flour.
  • Put the bread mix into the pan.
  • Don't fill the pan too full. Filling it about two-thirds of the way is good because we've used things like baking powder, baking soda, and eggs to help the bread rise.
  • Bake at 160 degrees Celsius for 50 to 60 minutes, but start checking it after 45 minutes.
  • Stick a toothpick into the bread to see if it's ready. If the toothpick comes out clean, the bread is done.
  • Remove the pan and set it on a rack. Take the bread out of the pan to enjoy your delicious banana bread.
  • Even though banana bread can last over a week where I live, it usually gets eaten in just one day.

Notes

  • You can use regular flour instead of whole wheat flour (either half and half or all regular flour). However, I like whole wheat flour because it's healthier and adds a nice texture to the bread because of the fiber.
  • You can use butter instead of cooking oil, but I prefer oil because it's healthier.l.

    Awesome recipe, Debjani 🙂 But I feel butter is healthier. Especially if it is homemade. Refined Oil is processed and it's not healthy in any way.

      Well, the calorie needs to be counted, dear 😉 moreover, in case of butter ( if that is not homemade) preservatives will be there..
