This microwave recipe for Baby Potatoes with Herbs is one of my favorites for several reasons. When I'm preparing a Sunday chicken roast or simply grilling or baking fish or chicken, these herby potatoes make the perfect side dish. At home, they're often ready even before the main course. Sometimes, I pack these herb-loaded potatoes in our lunchboxes for work or for pasta to take to school. They are satisfying, full of flavor, and most importantly, incredibly simple to prepare.

I've been making these herb potatoes for years, but I've never shared the recipe here until now. However, when I started my microwave series recently in 2026, I realized this easy potato recipe, cooked in the microwave, would be a perfect fit for the collection. Don't you agree? What makes this herb microwave potato recipe so much fun is that the entire cooking process happens in the microwave, not the oven! Baby potatoes are ideal for this recipe, but regular potatoes work fine if baby ones aren't available. While I prefer fresh herbs like thyme, rosemary, dill, or parsley, dried herbs also work perfectly, making this a very flexible recipe. The ingredients are simple: baby potatoes, fresh herbs, butter, and basic seasonings.

Step-by-step Instructions

A total of 15 minutes of cooking, and you're done! You'll have perfectly soft potatoes, full of herb flavor, with delightfully crispy and crunchy skins, all from your microwave.

Baby potatoes are ideal for this recipe; I used 500g. First, wash the potatoes very well to remove any dirt. There's no need to peel them, as the crispy skin adds another layer of flavor once cooked. However, if you prefer, you can peel them.

Pierce a few holes in the potatoes with a fork. Place the potatoes into a microwave-safe bowl with a lid; a glass bowl works best.

Add 3-4 tablespoons of water - this amount is just right, so avoid adding more.

Also, stir in ½ teaspoon of salt.

Cover the bowl with its lid.

Microwave the bowl on high (900 watts) for 5 minutes.

After cooking, you'll find the potatoes are soft and have absorbed the water.

Now, add your fresh herbs; I used parsley, rosemary, and thyme from my kitchen. Chop herbs roughly before adding them. If fresh herbs aren't available, you can use dried herbs or simply a teaspoon of pizza seasoning.

Next, add 50g of butter, another ½ teaspoon of salt, 1 teaspoon of black pepper powder, and 2 tablespoons of chopped garlic.

Mix everything together thoroughly.

Microwave this time without the lid, on medium heat (600 watts) for 10 minutes. After 5 minutes of cooking, take the bowl out and stir it well to ensure even cooking. Then, return it to the microwave for the remaining 5 minutes.

Once cooked, remove the baby potatoes from the microwave, give them another good stir, and serve hot with baked chicken or roast chicken and rice.

Substitutions and Variations
- Potatoes - For this recipe, I use baby potatoes with their skins, but you can also use regular potatoes, peeled or unpeeled. Even potato pieces will work well.
- Herbs - I prefer fresh herbs, though dried herbs are a good alternative.
- Spicy - To add some heat, stir in chili pepper flakes while cooking; a few fresh green chilies also provide wonderful flavor.
- Butter - I use salted butter, but feel free to substitute with unsalted butter or olive oil-just remember to adjust the salt in the recipe accordingly.
- Cheesy Potatoes - For a cheesy twist, add some grated mozzarella after seasoning the potatoes with spices and herbs, and let it melt. This will make them wonderfully cheesy.
- Vegan - To make this dish vegan, simply use olive oil instead of butter.
