Ingredients

  • 500 g baby potatoes
  • ½ bunch parsley
  • ½ bunch rosemary
  • 2 twigs thyme
  • 1.5 tablespoon salt
  • 1 teaspoon black pepper powder
  • 4 tablespoon water

Instructions

  • Baby potatoes are ideal for this recipe; I used 500g. First, wash the potatoes very well to remove any dirt.
  • There's no need to peel them; the crispy skin adds another layer of flavor after cooking. However, you can peel them if you prefer.
  • Pierce a few holes in the potatoes with a fork.
  • Next, place the potatoes into a microwave-safe bowl with a lid.
  • I like to use a glass bowl for this.
  • Add 3-4 tablespoons of water.
  • This amount is just right, so don't add more.
  • Also, add ½ teaspoon of salt and mix everything thoroughly.
  • Cover the bowl with its lid and microwave on high (900 watts) for 5 minutes.
  • After microwaving, you'll find the potatoes are soft and have absorbed the water.
  • Now, add fresh herbs; I used parsley, rosemary, and thyme from my kitchen. Roughly chop the herbs before adding those.
  • If fresh herbs aren't available, you can use dried herbs or simply a teaspoon of pizza seasoning.
  • Finally, add 50g of butter, ½ teaspoon of salt, 1 teaspoon of black pepper powder, and 2 tablespoons of chopped garlic.
  • Mix everything together very well.
  • Microwave the potatoes uncovered on medium heat (600 watts) for 10 minutes.
  • After the first 5 minutes, remove the bowl and stir the potatoes well to ensure even cooking, then return them to the microwave for the remaining 5 minutes.
  • In just 15 minutes, you'll have perfectly soft potatoes, full of herb flavor, with delightfully crispy and crunchy skins, all from your microwave!
  • Carefully take the herb potatoes out of the microwave, give them another stir, and serve them hot alongside baked chicken, roasted chicken, and rice.

Notes

  • For this recipe, I use baby potatoes with their skins, but regular potatoes, peeled or unpeeled, or even potato pieces, work just as well.
  • I prefer fresh herbs, though dried herbs are a good substitute.
  • To add some spice, you can stir in chili pepper flakes while cooking, or for a wonderful flavor boost, toss in a few green chilies.
  • I typically use salted butter; however, unsalted butter or olive oil can be used instead, just remember to adjust the salt in the dish accordingly.
  • To make this dish vegan, simply use olive oil instead of butter.
