    Debjanir Rannaghar Youtube channel is an extension of the blog https://kitchenofdejani.com run by Debjani Chatterjee Alam. The blog is solely run by Debjani however, the youtube channel is joint collaboration and run by Debjani and her husband Mehebub Alam. Debjani is a financial analyst by profession and Mehebub is an Architect, both ate Bengali and from Kolkata. They both love and respect their food. Through this channel, they want to share video recipes of the already posted recipes from Debjani's food blog "Debjanir Rannaghar".

    Here's the Calcutta Mutton Biryani recipe for you from @Debjanir Rannaghar . Kolkata Mutton Biryani is a flavorful delicacy cooked with mutton chunks, rice, potato, and boiled eggs (optional). I, however, have not used Egg in this recipe. 

Kolkata Biryani is descendent of Awadhi Biryani which is, in fact, a known fact. This Biryani is signified by the aromatic rice; soft chunks of meat and most importantly the presence of Potato in it. In fact, potato makes it different.     Patali Gurer Payesh (also known as Nolen Gurer Payesh is a Bengali Rice Kheer prepared with seasonal date palm jaggery aka Patali Gur. We use either solid date palm jaggery (patali gur) or liquid Jaggery (Nolen Gur) to make this rice pudding.
In this recipe, I have used Khejur Patali Guri to make the Bengali Payesh along with Gobindobhog Rice.

    Lau Chingri is a quintessential Bengali delicacy. It is a semi-dry curry cooked with bottle gourd and prawns. We serve Lau Chicngri along with steamed rice as part of a typical Bengali non-vegetarian meal. 
Finely chopped bottle gourd is slow-cooked along with fried prawns to the level of perfection and the end result is mindblowing Lau Ghonto with chingri. As tempering dry red chilies, bay leaf, and cumin seed are used. Last but not the least, a spoonful of Ghee makes it complete. We do not use jumbo prawns, Golda chingri or Bagda chingri while cooking Bengali Lau Chingri. Instead, in this recipe. we use small prawns.

    Cake Mixing aka soaking dry fruits for the Christmas cake is almost a ritual that started a month before Christmas. In Kolkata, this ritual is quite famous all thanks to the Ango-Indian population. We are lucky that we grew up eating one of the best versions of Christmas cake here. 
It is advisable to soak the dry fruits at least for one month before making the plum cake, however, try to soak those at least for 15 days so that you can make a decent cake using those. You can keep this mixture for years following the process of preservation. I have dry fruits soaked in alcohol in several batches starting from 2014. 
In this video, I have shown how to soak dry fruits in alcohol to make a Christmas cake. The ingredients may vary from person to person however, one thing is loved in my city and is a mandatory ingredient- Old Monk Dark Rum. What else?     Alcohol soaked dry fruits for Christmas Cake recipe | Christmas Recipe

    Mochar Ghonto is a traditional Bengali dry curry cooked with Banana Blossom. This is a signature Bengali delicacy.  
There are several recipes available with ingredient variations. One such variation is cooked with coconut and fried lentil dumplings aka Bhaja Bori. 
Chola Shiddho aka boiled Black Chickpeas aka Kala Chana is also added to Mochar Ghonto and so is Potato aka Aloo. However, the recipe I am sharing does not call for both. I will share the version with potato and chickpeas separately.
Apart from the Vegetarian Mochar Torkari, we cook Mocha with Prawns or Shrimps as well which is known as Mocha Chingri. I will for sure share the recipe of the same here at @Debjanir Rannaghar soon.
Mocha Cutting and cleaning:
One of the important and trickiest parts of cooking banana flowers is the cleaning and cutting the banana flower or what we call Mocha Kata o Porishkar kora in Bengali. I have shown the process step by step in this video.

    Doodh Ilish is a subtle Hilsa Curry aka Ilish Macher Jhol cooked with milk. We mostly cook Hilsa fish with Mustard paste (shorshe Ilish); or Yogurt (doi Ilish); or we steam ilish mach with both (ilish Bhapa) or we cook it with eggplant (ilish Beguner Jhol); however; there are recipes of Ilish Maach which we cook without these ingredients. Doodh Ilish is one such dish. A bit different from the common dishes cooked with Hilsa, but this recipe is a family favorite. It is subtle; very lightly spiced apart from green chilies and I must mention I use three different versions (gota; kata and bata) of green chili while cooking this! Also, I have shown, how I keep seperated some oil while frying the Hilsa. Ilish Macher Tel is important, after all!
