So it is Shab-e-barat today and I decided to make the customary halwa. The one I cooked is prepared with Egg. Yes, I am talking about Aande ka halwa aka Dimer Halua. Considering what people are facing every single mi

Considering what people are facing every single minute, we the middle-class are living King's life and yet we are complaining about things like "I do not have potatoes at home!", I cannot watch Ramayan!", "work from home is boring!" etc. I can understand real problems but ঘ্যানঘ্যানানি (read nagging) and দুঃখবিলাস (read celebration of trouble) are beyond my limit! At this moment we have sufficient food to eat; a roof over the head, money to support the family and most importantly we have the family with us! Aren't these enough to spread positivity? I cannot really complain and I wouldn't! After the "tiktoking" torture of "Tum itna jo muskura rahe ho" and not cooking the lunch (we had leftovers) how can I not cook the dinner! Anniversary calls for some decent food after all. The baked mac though was cooked with leftovers ( a portion of the chicken and veggies I boiled for Coffee 😂😂); a basic watermelon and olive salad and garlic bread (again topped with the leftover veggies) and that was all. Only indulgence was the limited edition strawberry baileys where no rationing was involved. Pasta had Pepsi and was complaining why cannot she drink the strawberry milkshake 😐😐😐😐! The daughter requested for something special and I couldn't say no to her. Lunch after all was managed with the leftovers as I couldn't manage to cook. I am working from home and the days are quite busy. To make her dinner special, I made gnocchi from the scratch. The sauce was quite basic though. Pasta wanted to have cheesy Pasta 😁 and, hence, I made a cheese sauce similar to bechamel sauce with the ingredients available. She had the gnocchi cheerfully and requested me to keep some for breakfast 🙂. Here's how I made the Gnocchi! For Gnocchi: 4 potatoes 1 cup all purpose flour + some for kneading 1 egg For the sauce: 100 ml milk 2 tbsp. Butter 1 tbsp. All purpose flour 1 tbsp. Garlic paste 1 tsp. dried parsley 1 tsp. freshly crushed black pepper 1 tsp. Mixed herbs 1/2 tsp. Salt 1 cup processed cheese (grated) 1/4 cup parmesan Process: Boil potatoes with the skin on. Peel the skin when the potatoes are semi-hot. Mash potatoes and add one egg and the flour. Knead a soft dough. Do not over-mix. The dough should be sticky. Cover it and give a standing time of 15 minutes. Divide the dough into 4 parts. Sprinkle some flour on the surface and make a rope of one part if the dough. Cut it into small pieces and use a fork to prong. In the meantime boil sufficient water with salt and boil the gnocchi till those float on the top of the water. Strain those. Heat butter in a pan and add garlic paste and cook for a minute. Add 1 tbsp. Flour and fry for a while. Add milk and mix vigorously. Now add the spices followed by the processed cheese. Make a semi-thick sauce. Lightly toss the pasta and serve hot. Another day another recipe during the lockdown period. Well, I am nothing but overwhelmed to receive the recipe requests through different mediums. I have no plan to post the recipes during the lockdown, however, as a responsible food writer, if my readers want me to write for them, to help them, I for sure will do that without nurturing panic and by using the resources within reason. We are cooking one dish every day along with a portion of carbohydrate and that is all at our end. We both are working from home and all the responsibilities are well-distributed. I cooked a Shobjir Jhol with 10 pieces of Chingri Shutki/ dried prawns (around 50g) today and I used hardly 200g of veggies in it. Fish is not available in my locality and neither we plan to purchase during the lockdown period by going out. I have around 500g of dried fish available which I plan to use wisely. Day 4 of isolation! I see a few people criticizing food posts in this challenging period. Remember, whatever we do, we have to eat and we have to live without being in depression. Food makes me happy and I am not irresponsible and depression is not my cup of coffee. I am working from home, and also cooking a meal every day with the resources available. I do not like my food looking bad and hence you have to excuse the picture 🙂 . Yesterday's rice turned into a soybean and egg hotchpotch for the entire family while the work from home continues. When I say the entire family; I mean the entire family including the dog. We are out of chicken and we do not plan to purchase within the isolation period unless available online. Though we have dog food at home but decided to ration that also. Hence, a dog-friendly hotchpotch has been made for Coffee without oil, onion, salt, and spices; with rice, veggies, soybean, and egg. Aloor Porota (not Aloo Paratha) is dinner (with a dollop of aachar) and a few of these will be our breakfast tomorrow and we will have the stuffing (aloo bhate) with lunch as well! Aloo works you know! The only indulgence is the use of All-purpose flour aka Maida for the dough which is a typical Bengali way of making Porota (not Paratha). This is what I can manage while working from home and I am absolutely fine with the same and so does the family. You may say I am unnecessarily panicking but at this moment I am preferring to use the resources as little as I can. We are cooking once in a day and that too very basic meal which for sure is nutritious enough. This is to restrict over-purchase and to utilize what we are already having at home. One Eggplant is being used in making Neem Begun (stir-fried eggplant and Neem leaves) for us and a Begun Bhaja (fried Eggplant) for Pasta. I cooked Dimer Jhol which is excessively runny so that another curry or dal can be ignored. Pasta is getting bored at home and not much willing to read or write. I have given her some cream to make ice cream with two conditions: she has to make it her own and she will wash the utensils as well. I have instructed her to have one spoonful ice cream each day. These restrictions are not typically out of panic. In fact, when it comes to storing groceries, I overly store things. I travel a lot for work and hence prefer keeping things at home. At least, so far. The outbreak followed by the staying at home phase is a learning for me. When I checked the stored materials I have, I was ashamed. The easiest thing to do is to discard the peels after cutting the veggies which we do in general. However, the practical thing to do is to utilize the peels to make a preparation worth having. The one in the picture is cooked with bottle gourd and potato peels and known as khosa bhaja. Is it a delicacy? If you ask me, my answer is for sure a big fat "yes!'
