I'm not too particular about the herbs I use, often turning to dried herbs, but incorporating fresh herbs when they're available. As for the glaze, I simply work with the sauces I have on hand, without a set formula. Meatloaf has always been a personal favorite of mine, and I particularly enjoy the rich, savory flavor of a pork-based meatloaf. Moreover, the daughter and husband are also avid fans of meatloaf. Our beloved doggos, with their discerning canine palates, can't resist a morsel or two of the meatloaf as well. I'm always happy to indulge them with a small portion, as I know they thoroughly relish the savory flavors and tender texture.
One of the best things about meatloaf is how incredibly easy it is to prepare. I've perfected my recipe over the years, and I've found that it's easy to make a large batch and store it for later use. This allows me to quickly and effortlessly whip up delicious meatloaf sandwiches within no time. While meatloaf is delightful on its own, I often like to serve it alongside a side of creamy mashed potatoes and a selection of sautéed vegetables.

Substitutions while making meatloaf
- Type of meat - For this recipe, I used ground pork. However, you can substitute it with chicken, turkey, beef, lamb, or mutton. Avoid using minced meat as ground meat is the ideal choice for meatloaf.
- Spices - I prefer using fresh herbs, however you can use dried herbs as well.
- Gluten-free - Use cornmeal instead of breadcrumbs to make the meatloaf gluten-free.
- Indianized meatloaf - Now this is fun. I once tried using cumin powder, coriander powder, a bit of Garam Masala, and coriander leaves while making meatloaf. It was quite good!
Variations of meatloaf
Making a delectable meatloaf at home begins with selecting the right protein. While my recipe uses pork, you can experiment with chicken, mutton, lamb, beef, or even turkey, all in ground form. In fact, a mixture of two similar proteins, either white or red works great. To season the mixture, I opt for a blend of black pepper and paprika, but feel free to explore alternatives like red chili powder or freshly chopped chilies. When it comes to the glaze, let your creativity shine. I often combine barbecue sauce, tomato ketchup, mustard, and brown sugar, but you're welcome to create your signature topping that complements the flavors of the meatloaf. As I mentioned above you can replace breadcrumbs with cornmeal.
How to make Pork Meatloaf with Glaze - Instructions
Time needed: 1 hour
- Combining the ingredients to make the meatloaf
Mix ground pork with fresh eggs, and seasonings - black pepper, salt, paprika, cinnamon, onion powder, and garlic powder in a bowl. Add spices such as thyme, rosemary, dill and parsley. Peel and roughly chop the garlic cloves, then grate the onion and add both to the bowl. Thoroughly combine the pork with the spices and herbs until the mixture is well-blended. Finally, incorporate breadcrumbs to bind the ingredients into a dough-like consistency.
- Baking the meatloaf
Prepare a baking tray by coating it with oil and covering it with baking paper. Then, place the meat mixture and shape it to form a loaf. Now in the preheated oven bake for 15 minutes at a temperature of 160 degrees Celsius.
- Glaze
Make a glaze using tomato ketchup, BBQ sauce, mustard sauce, and brown sugar.
- 2nd bake after applying the glaze
Apply the glaze generously over the baked loaf and then bake for 30 minutes at 160 degrees C. Once done cut the meatloaf into slices to enjoy.

Last answer first? When making a meatloaf, ground meat works better. While "ground meat" and "mince meat" are often used interchangeably, they differ technically though. Ground meat is softer, produced by grinding the meat into a finer texture. On the other hand, minced meat results from chopping the meat into smaller particles, rendering it more coarse and potentially containing small bone fragments.
Is it not? I guess yes. Though you can use a pressure cooker for substitute baking but haven't tried it.
I refrigerate the freshly cooked meatloaf for a minimum of 3 days after it comes to room temperature in an airtight container. This allows me to utilize the leftovers in various meal preparations. There is another way of doing it for longer storage time. Bake the meatloaf without sauces and store it. While eating glaze it with the sauces and bake for 15 minutes.
Meatloaf needs basic baking knowledge and it requires rather simple pieces of equipment as well. To prepare the meatloaf, you'll need a spacious mixing bowl to blend the ingredients, and a baking pan, in addition to having access to an oven.

Instructions
Process of making easy pork meatloaf at home
- In a mixing bowl, mix ground pork with three fresh eggs.
- Next, add a blend of seasonings as mentioned in the ingredients list - black pepper, salt, paprika, cinnamon powder, onion powder, and garlic powder.
- Now remove the leaves from the thyme and rosemary sprigs.
- Finely chop dill and parsley if using.
- Peel and roughly chop the garlic cloves.
- Grate the onion.
- Add both onion and garlic to the bowl.
- Thoroughly mix the pork with the spices and herbs until well incorporated.

- Generously apply the prepared glaze, ensuring it fully coats the loaf.
- Then, bake it at 160 degrees Celsius for 40 minutes.
- Once the baking is complete, take the meatloaf out of the oven and cover it with the juices.
- Finally, slice the meatloaf and serve it hot, either as part of a sandwich or as a generous slice accompanied by mashed potatoes or vegetables – enjoy the delicious meal!
