Homemade Indian-Style Mutton Leg Roast in an Oven
Here in this post, I will elaborate on the process of making Indian Mutton Leg Roast aka Indian-style Mutton Raan Roast easily at home. You don't need to have an in-build oven at home. Instead, a convection Microwave oven or an OTG would work just fine. I prefer to use an OTG to roast the mutton leg. Apart from the time needed to fully roast the Mutton Raan, the rest of the things are quite easy to manage.
Masala Raan, the easy process?
Is the process of roasting a full leg of mutton or a lamb leg easy? Well, my friend, time plays a vital role in the process. Do not think about reducing the roasting time, or else you are going to get uncooked masala raan!
Last year, a few days before Christmas, Pasta came up with the idea of Masala Raan roast. I do not have an in-built oven at home however I possess both OTG as well as a Microwave oven with the convection mode.
I grill mutton quite often and do make Pork roast and beef roast as well. Even a Full Chicken roast is a regular affair. However, I prefer to skip big chunks of meat so that I can skip extra hours for roasting. However, last Christmas it was different as the plan was to make an Indian-style roast leg of mutton.
Mandatory recipe blog and why
While I was doing the preparation, I decided to write this blog post and I captured the video clips so that I can make a detailed video of Homemade Indian-Style Mutton Leg Roast. A few years back, I started Debjanir Rannaghar so that I can have my own journal of recipes. My intention was to create a ready reckoner of the recipes I have already tried. With time I am able to write more than 500 (well, nearby 700) recipes that I have tried. Now that the numbers are decent, these days I mostly concentrate on polishing the old recipes in terms of the write-up, recipe faq, or pictures. I try to make the recipes SEO-friendly as much as possible without removing the essence of the personal fragrance.
Why it is important to record recipes in a food blog
I may not post recipes on a regular basis these days but I work on the blog to make it more viewable and searchable. Back then I used to write recipes then and there to avoid missing any point or use of ingredients. Over time I stopped doing that and started concentrating on seasonal food. Following the simple process of writing recipes I cook and create at home, today I have more than 500 recipes on my blog.
You can take the example of this Indian Masala Mutton Leg Roast. I started working on the blog post from the day I started working on the mutton raan. Well, the entire process of roasting the mutton raan (including marination and roasting) involved more than 2 days. I clicked the pictures and I captured the video clips. I wrote down the processes I followed. Now the blog is getting updated with the recipe. I edited and posted the video recipe for Masala Raan a few days back. This simple exercise not only helps me to find the recipe in the future but also helps my readers and most importantly helps me to run this blog. It is just that it took me one year to edit everything 😛 .

Tips! Mutton Raan Roast
Are you planning for Mutton Leg Roast aka Mutton Raan Roast? If your answer is yes, you must keep in mind a few things about roasting a mutton leg, especially the amount of time needed to roast a mutton leg properly.
- A full leg is going to be about 1.5 kgs to 2.5kgs. Hence, the process is going to take time.
- Combining the marination time and also cooking time, you must have at least 48 hours.
- The roasting takes around 3 hours and you cannot compromise there!
- Last but not the least, while procuring the mutton raan, check for the best.

Description
Indian Mutton Raan roast aka Indian-style Mutton leg roast, a step-by-step recipe with pictorials and video which is easy to follow.
Ingredients
- 2.5kg Mutton Leg (whole and dressed)
Marination Stage 1:
- 1 Dry Red Chilli
- 1 Black Cardamom
- 1 Star Anise
- 9 Green Cardamom
- 1 Tsp. Ajwain
- 1 Tsp. Cumin Seed
- 1 Mace
- ½ Tsp. White Pepper
- 2 Cinnamon stick
- 1 Tsp. Coriander Seed
- 1 Tsp. Salt
- 1 Tbsp. Ginger Paste
- 1 Tbsp. Garlic Paste
- 2 Tbsp. Mustard Oil
Marination Stage 2:
- 250ml Plain Curd
- 1 Tbsp. Ginger Paste
- 1 Tbsp. Garlic Paste
- 1 Tsp. Turmeric Powder
- 1 Tsp. Cumin Powder
- 1 Tsp. Coriander Powder
- 1 Tsp. Red Chili Powder
- ½ Tsp. Garam Masala Powder
- 1 Tsp. Sugar
- ½ Tsp. Salt
- 1 cup Onion Crisp aka Piyaj Beresta
- 50ml Mustard Oil
Other
- 8 onion (small)
- 8 tomatoes (small)
- 1 Tsp. Salt (to adjust, if needed)
- 50ml Ghee
Instructions
- Ask the butcher to dress the mutton leg properly while purchasing.
- The mutton leg aka mutton raan should have dip slits on it.
Marination stage 1 (before 48 hours of making the roast)
- Wash and clean the mutton led and pat dry it.
- The mutton leg should be at room temperature.
- Dry roast Dry Red Chilli, Black Cardamom, Star Anise, Green Cardamom, Ajwain, Cumin Seed, Mace, White Pepper, Cinnamon stick, and also Coriander Seed.
- Keep the flame low while dry roasting the spices.
- Switch the flame off when the spices emit an aroma.
- Wait till the temperature drops completely.
- Now make a coarse powder of the spices.
- Mix Ginger and garlic paste and also salt with this mixture to make a semi-thick paste.
- Add Mustard oil to this mixture and mix well.
- Apply this mixture to the mutton raan properly, especially within the slits.
- Once done, cover the mutton leg with cling film or plastic wrap and keep it in the freezer (not in the refrigerator) for at least 24 hours.
Marination stage 2 (before 8 hours of roasting)
- You need to take this out from the refrigerator at least 1 hour before roasting.
- Mix Plain Yogurt, Turmeric Powder, Cumin Powder, Coriander Powder, Red Chili Powder, Garam Masala Powder, Sugar, Salt, and Mustard Oil to make a thick paste.
- Now apply half of the marinade to the mutton leg and keep it in the freezer for 8 hours.
- Do not forget to apply the marinade within the slits.
- Keep the remaining marinade in the fridge.
Before Roasting the Mutton Leg
- Take the mutton leg out of the freezer for at least 1 hour before roasting.
- Take out the remaining marinade as well.
- Add 1 Tbsp. Ginger Paste and 1 Tbsp. Garlic Paste to it.
- Add 1 Cup of Onion Crisp aka Piyaj Beresta to this mixture as well.
- Apply this mixture to the marinated Mutton Leg and keep it as it is at room temperature for at least 1 hour (preferably 2 hours) before roasting.
- Do not forget to apply the marinade within the slits.
- Meanwhile, cut 8 onions and 8 tomatoes into four pieces each.
- Make a sturdy oven-safe tray ready.
- Place the mutton leg in the tray.
- Fill the sides with chopped onion as well as tomatoes.
- Pour the remaining marinade on top of the mutton.
- Melt 50ml Ghee and pour it over the mutton.
Roasting the Mutton Leg
- Preheat the oven to 140 degrees C for 15 minutes.
- Cover the mutton with aluminum foil.
- Roast it after keeping the cover on the lowest temperature of the oven for 2.5 hours.
- Remove the foil after 2.5 hours and keep roasting for 30 minutes at 140 degrees C.
- Check with a toothpick whether the same is coming out clean or not; if yes, the mutton raan is fully roasted, if not keep roasting for a few more minutes.
- Once done, switch the oven off.
- Take the roasted mutton raan out after 15 minutes.
- Be ready with a Steak Knife while serving the Roasted Mutton Raan!
Notes
- In general, a whole mutton leg is of a size of around 1.5 kg to 2.5kg. Needless to say, it will take at least 3 hours to roast the mutton.
- Marination plays an important role in this recipe. I marinate the mutton leg at least for 48 hours. However. 72 hours works best!

Got a bit confused on the oven temp setting
Preheat to 140 degree
Then put mutton leg and bake at 140 degree for 3 hours ?
Instruction says lowest oven temp , which is 50 degree in my case
So confusion

I made this recipe and it was absolutely delicious! I added in potatoes and served with roti. Due to time, I was unable to roast in the oven so I made use of the pressure cooker, which saved a lot of time. I will definitely make it again!
