10 best Bengali Mutton Recipes
In this post, I am listing my favorite 10 best mutton recipes. The choices are needless to say tough considering there are several Bengali Mutton dishes to consider yet I am picking my favorite of the lot.
Tips for purchasing perfect mutton!
There are a few things that you must consider while purchasing mutton: freshness, tenderness, and juiciness. The cut of the mutton is equally important considering the dish you are cooking. You must select a shop where the butcher knows about the exact cuts needed for a particular dish. I am listing the details below which are to be considered while purchasing mutton.
- Freshness
- Color
- Texture
- Tenderness
- Juiciness
- Fragrance
- Butcher's experience
Here are my favorite Bengali Mutton dishes
1. Mangshor Jhol
Tempting yet comforting Bengali Mangshor Jhol needs no further introduction. Aloo aka Potato plays an important role in making the Bengali Mangshor Jhol device. This is a comforting mutton curry. We mostly cook it with a few spices and big chunks of Potatoes. Mangshor Jhol is my first choice when it comes to the 10 best Bengali Mutton recipes. This is also known as Bengali Mutton Curry.
2. Kosha Mangsho
That one dish that is synonymous with Bengali cuisine (non-vegetarian part) for sure is Kosha Mangsho. Surprisingly, this dish came into existence all thanks to the restaurants but not home cooking. Golbari once famous for their Kosha Mangsho may not be serving the best now however, years of experience of having it taught the Bangalis to cook Kosha Mangsho properly. Hours of slow cooking and patience make it the best. The end result is enough to make it the king/ queen of Bengali cuisine. This is also known as Mutton Kosha.
3. Mangshor Ghoogni
Mangshor Ghoogni, a meaty Chaat cooked with mincemeat and yellow peas. This is a signature Bengali delicacy. This meaty chaat will for sure make you beg it again and again once you have some of it. This is also known as Pathar Ghugni.
4. Posto Mangsho
Bengalis love their portion of Posto aka Khashkhas. Beyond Aloo Posto and Postor Bora we often cook animal protein with Posto. Posto Mangsho is a hearty preparation of mutton. We cook mutton along with a generous portion of Poppyseed and is an aromatic yet comforting treat. This is also known as Poshto diye Mangsho.
5. Mete Chorchori
Mutton liver cooked to perfection with small chunks of potatoes and spices. Mete chorchori is a flavorful as well as signature Bengali delicacy. Chorchori is a type of semi-dry dish and the combination of mutton liver and potato makes it irresistible.
Joggibarir Mangsho aka Biyebarir Mangsho. This is also known as Meter Torkari.
6. Mutton Nihari
Meat cooked overnight with a few spices and served on a winter morning with a choice of Poori or kachori. Mutton Nihari is a hearty breakfast dish famous amongst Bengali Muslims. This is a winter favorite in the city of Kolkata as part of the famous winter breakfast. This is also known as Ghosht Nihari.
7. Kolkata's Mutton Rezala
Without mutton rezala this listicle will be incomplete. Subtle, comforting gravy and a soft chunk of mutton make it a must-have. This is also known as Mughlai Rezala.
8. Joggibarir Mangsho aka Biyebarir Mangsho
Red, hot, spicy, semi-runny mutton curry cooked without potato, Biyebarir mangsho is a rich affair. This is a good old marriage feast favorite in Bengal. Thus particular mutton is a specialty of the traditional rannar thakur clan (traditional cooks) and is perfect for lunch when paired with steamed rice. This is also known as Joggibarir Mangsho aka Kutum barir Mangsho.
9. Gota Moshlar Magsho
A traditional Bengali mutton curry cooked with whole spices, Gota Moshlar Mangsho is one of its kind. With slow cooking, the use of whole spices makes it amazing. We mostly serve it with Ghee Bhat, Basanti Pulao or Rice. This is also known as Kata Moshlar Mangsho.
10. Niramish Mangsho
Last but not the least, the famous oxymoron mutton curry, Niramish Mangsho. We cook it without onion and garlic and hence the name Niramish. This is something we cook during Durgapuja and Kalipuja in Bengal. This is also known as Bhoger Mangsho.
There are several mutton dishes I wish to mention, however, this listicle is about just 10 best Bengali mutton dishes.
