What to do with leftover Christmas cake? Rum balls, of course!
Last Christmas and New Year, I baked around 70 cakes for friends and family. I was also lucky enough to receive a wonderful selection of cakes from baking friends and even some delicious goodie bags from well-known hotels in Kolkata. Now, after all the celebrations, I'm left with a whopping 18 pounds of cake filling up my fridge!
My house-help has given me an ultimatum: use them or lose them! Throwing them away is out of the question, so I decided to get creative. The first thing that popped into my head? Rum balls! They're the perfect way to use up leftover cake, and the best part is, they require almost no cooking or baking.

Tips to make perfect Rum Balls!
I planned to use rum I had on hand, but then decided to use the rum-soaked dry fruit mixture I already had. This gave the rum balls an extra layer of flavor, complementing the rum I added. Also, I used a rich fruit cake for the base instead of plain chocolate or vanilla cake.
Of course, you can use any type of cake and rum you prefer to make these delightful treats. Just a reminder, I won't be serving these rum balls to our daughter, Pasta, and you probably shouldn't give them to your kids either, unless you want them to have a dose of alcohol. To finish them off, I used two kinds of chocolate to coat the rum balls.

Ingredients for making Rum balls at home
This recipe is simple, needing only a few ingredients and minimal prep time. I used a Rich Fruit cake (click for the recipe), Rum extracted from the Rum-soaked Dry fruit (click for the recipe), along with some extra Rum (I used Old Monk), Raisins and Nuts from the same Dry fruit mixture, semisweet Dark Chocolate, Milk Chocolate, White Chocolate, and cocoa powder for decorating.
I like my Rum Balls a bit gooey, so I added a touch more Rum. These Rum Balls have two chocolate coatings. The first, a softer outer layer, is made with a mix of milk and dark chocolate. This is followed by a harder shell of Milk Chocolate. If you prefer a single, crunchy chocolate coating, just skip the milk-dark chocolate layer.

Double Chocolate Rum Balls | Rum Ball Cake Recipe
An easy recipe of Rum Balls prepared with leftover Cake Crumbles
Ingredients
- 4 cups Cake Crumb or a pound cake
- 30 ml Dark Rum ¼ Cup
- 60 ml Rum Extracted from the Rum soaked Fruit
- ½ cup Rum soaked Raisin/ Fruit Mixture
- 30 ml Warm Milk
- 200 g Dark Chocolate
- 200 g Milk Chocolate
- 50 g White chocolate for decoration
- 1 tablespoon Cocoa Powder for decoration
Instructions
- Start by crumbling your favorite cake into a deep bowl using your fingers or a fork. I used a rich fruit cake for this recipe.
- Next, add rum and rum extract from your rum-soaked dried fruit mix to the crumbled cake.
- Begin kneading the mixture until it forms a semi-firm consistency. I'm using rum from a fruit soak I prepared around Christmas time.
- Incorporate rum-soaked raisins and fruits evenly into the mixture.
- Cover the bowl with cling film and refrigerate the mixture for 15 minutes.
- Remove the mixture from the refrigerator and shape it into small balls. I made mine about the size of tennis balls.
- Place dark chocolate in a glass bowl and microwave it for 40-60 seconds, stirring until smooth. Add a little milk to the melted chocolate and mix.
- Dip each rum ball into the dark chocolate, then place them on a silicone mat or plate. Refrigerate until the chocolate is set. This layer will be soft.
- Melt milk chocolate using the same method as before, then coat the rum balls in the milk chocolate. Refrigerate again for about 15 minutes, or until the chocolate is firm.
- Finally, coat the rum balls in chocolate, decorate them as you like, and sprinkle with cocoa powder.
- These rum balls taste even better if you let them sit for two days before serving. If you plan to save some, be sure to store them properly in the refrigerator.
