Our little Pasta started her travel adventures with us when she was just 15 days old! We took a drive to Damdama Lake, about 35 km from Gurgaon. Whether the destination was near or far, Pasta was always a great travel buddy, no matter how we got there. I learned a valuable lesson during her first flight at just 1.5 months old when I forgot her pacifier. Since then, I always make sure to pack her food, utensils, and even a bottle sterilizer for trips of any length. Now that she's a year and seven months old, she's starting to try new foods, but I still bring homemade meals to limit her outside food consumption and make sure she gets a good meal. Ridiculously Easy Homemade Chicken Mayonnaise Sandwiches
Preparing sandwiches for long journeys isn't just a consideration for Pasta, our beloved family dog, but for all of us human travelers as well. While a dog-friendly snack is essential for Pasta's well-being during the trip, the human contingent eagerly anticipates something a bit more substantial and satisfying: homemade Chicken Mayonnaise Sandwiches. There's a certain nostalgia and comfort associated with these sandwiches, far surpassing any commercially produced alternative. The soft, slightly sweet bread, the tender shredded chicken seasoned perfectly, the creamy and tangy mayonnaise binding it all together - it's a familiar and beloved taste that evokes happy memories and provides a welcome distraction from the monotony of a long journey. Each bite is a small reminder of home, carefully prepared with love and anticipation for a shared experience, making those Chicken Mayonnaise Sandwiches a vital part of our travel tradition.
During the Good Friday and Easter long weekend, we celebrated our 5th anniversary with a trip to Ajmer and Pushkar. The drive from Gurgaon to Ajmer took about seven hours, and I packed a box of delicious, juicy chicken mayonnaise sandwiches for the journey. They were a truly yummy treat!
Tips
My secret to making the best chicken mayonnaise sandwiches is using boiled chicken, but I never throw away the water I use to boil it. This is one of the tricks to making them extra juicy and flavorful. I use equal amounts of chicken and water when boiling - for example, one cup of chicken to one cup of water - and let it boil until almost all the water is gone. Then, I add simple ingredients like mayonnaise, salad dressing, salt, and pepper.

Chicken Mayonnaise Sandwich
Ingredients
- 8 Bread Slices
- 250 g Boneless Chicken 2 Cup
- 2 cup Water
- 4 tablespoon Mayonnaise
- 2 tablespoon Caesar Salad Dressing optional
- 3 tablespoon Butter
- 2 tablespoon Lemon Juice
- 1 teaspoon Black Pepper freshly crushed
- 1 teaspoon Salt
Instructions
- First, wash the boneless chicken thoroughly and cut it into small, bite-sized cubes.
- Next, marinate the chicken with lemon juice, half a teaspoon of salt, and half a teaspoon of crushed black pepper. Let it sit for an hour to absorb the flavors.
- After marinating, place the chicken in a pot with an equal amount of water. Bring it to a boil over medium heat until the chicken is fully cooked. Then, continue cooking until all the water has evaporated.
- Allow the boiled chicken to cool completely before shredding it into smaller pieces.
- In a bowl, combine the shredded chicken with mayonnaise and Caesar salad dressing. Mix well until everything is evenly coated.
- Taste and adjust the salt and pepper to your liking. The chicken-mayo stuffing is now ready!
- When making the sandwiches, I personally like to leave the crusts on the bread. However, you can trim the sides if you prefer.
- Butter each slice of bread generously.
- Take one slice of buttered bread and spread about two tablespoons of the chicken-mayo stuffing evenly over the buttered surface.
- Top with another slice of buttered bread and gently press down to seal the sandwich.
- Finally, cut the sandwich diagonally and repeat the process to prepare the remaining sandwiches.

Substitution
- For this recipe, I chose white bread, but feel free to use whole wheat or multigrain instead. Sourdough is also a fantastic option!
- I also used homemade mayonnaise, but store-bought mayonnaise will work perfectly fine.
