    Kolkata Style Egg Chicken Chow Mien

    That Thuuuung Thuuuuung sound and amazing smell from the giant sized flat pan full of Chow Mien…. This is the commonest of the common picture of every single lane in Kolkata….City of Joy adopted this Chinese delicacy like its own child and now it is one of the famous street food of Kolkata and  there is almost no similarity between Kolkata style Chow mien and the so called authentic version of the noodle. Though Chow mien is now a common street food almost in every city but the typical Kolkatan flavour is nothing but unique for me…. I sometimes prepare Kolkata Style Egg-chicken Chow mien at home and try to make it as close as possible to the Kolkata-fied version of the dish!  I prefer to add both Chicken and Egg in my Chow mien …

    Egg Chicken Chow Mien – Kolkata Style

    • Prep Time: 20 minutes
    • Cook Time: 10 minutes
    • Total Time: 30 minutes

    Ingredients

    Units Scale
    • Chow Mien Noodles: 2 packets
    • Onion: 1(big); thinly chopped
    • Spring Onion: 4-6; chopped
    • Capsicum: 1(medium); thinly chopped
    • Carrot: 1 (medium): thinly chopped
    • Green Peas: ½ cup
    • Cabbage: 100g; thinly chopped
    • Beans: 6-8; diagonally chopped
    • Green Chilli: 4-5 (chopped)
    • Soya Sauce: 2 Tbsp.
    • Chilli sauce: 1 Tbsp.
    • Tomato Sauce: 1.5 Tbsp.
    • Vinegar: 1 Tbsp.
    • Vegetable Refined Oil: 3 Tbsp.
    • Egg: 4
    • Boneless Chicken: 200 g
    • Salt: to taste

    Instructions

    1. Boil noodles with water, salt and one teaspoon oil in a pan. Drain water and keep noodles aside.
    2. Boil chicken with water and salt for 10 minutes and drain water.
    3. Cut boiled chicken into strips.
    4. Microwave all the veggies except onion , garlic and green chilli for 3-4 minutes or half boil veggies and drain water.
    5. Hit oil in a non-stick pan and fry onions along with garlic flake.
    6. Add chicken strips, veggies and chopped grin chillies and sauté for 5 minutes in low flame.
    7. Add boiled noodles and salt and sugar and sauté for 5 minutes in low flame.
    8. Mix all the sauces mentioned in “Ingredients” along with vinegar and mix with the noodles.
    9. Beat eggs with a little salt and pour beaten egg over the noodle mixture and mix properly.
    10. Take out of the flame and serve Egg-Chicken Chow Mien hot.
