Debjani's Kitchen Cleaning Tips
This past month has been incredibly hectic, both at work and at home. With Durga Puja just around the corner, I'm rushing to finish all my chores so I can fully enjoy the celebrations with my family and make the Puja even more special. I've been running around to different shops, buying gifts for loved ones and myself. Because of all this, I barely have time to cook, let alone clean my house.
I'm the type of person who likes to keep up with regular house cleaning, especially in the kitchen. As a foodie with a family of food lovers, I'm always trying new recipes, so I make it a point to clean my kitchen regularly. I try to dedicate an hour each weekend to cleaning areas like under the sink, behind the microwave, and even under the refrigerator. I absolutely can't stand seeing cockroaches while I'm trying to create something delicious in the kitchen!
It's essential for every family to clean their house regularly, especially since even one cockroach can contaminate food and cause illness.
I've found Lal Hit, a popular cockroach killer, to be incredibly useful for keeping these pests away. I make sure to use it whenever I clean the kitchen each month. Its special nozzle gets into those hard-to-reach spots, wiping out cockroaches hiding in the corners. This keeps the kitchen clean and safe.
Now that Durga Puja is almost here, the biggest festival for Bengalis, it's time to prepare! We see Ma Durga as our own daughter, and the beauty of the festival lies in the fact that she visits us with her family. We celebrate her return with peace, love, and, of course, a clean home - a perfect welcome for our beloved daughter!

I truly enjoy decorating my home for Puja, and a clean environment is essential for that. Since we have so much delicious food and sweets during the festival, especially with all the cooking I do, keeping cockroaches away is a must. That's why I always use LAL HIT in places where cockroaches tend to hide, like under the fridge, behind the trash can, in the sink, and under the shelves.

Egg Curry was a frequent choice, especially when I needed extra time for cleaning or other tasks. "Hansher Dimer Dalna," or Duck Egg Curry, is a family favorite because it's so fast to prepare. There's nothing quite like enjoying comforting food with family during Puja! Give this simple Hansher Dimer Dalna recipe a try with steamed rice, and remember to keep your kitchen clean for a healthy life!

This duck egg curry is a family favorite. Using duck eggs, or "Hansher Dim" as they're known, elevates the regular Bengali egg curry, giving it a richer, more satisfying flavor. Here's the easy recipe for you to enjoy!

Hansher Dimer Dalna | Bengali Duck Egg Curry
Ingredients
- 6 Hansher Dim / Duck Egg
- 2 Potato
- 2 Onion
- 1 Tomato
- ½ teaspoon Ginger paste
- 1 teaspoon Garlic Paste
- 2 tablespoon Mustard Oil
- 1 teaspoon Ghee
Whole Spices
- 1 Dried Red Chili
- ½ teaspoon Whole Cumin Seed
- 2 Green Cardamom
- 1 Bay leaf
Powdered Spices
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Cumin Powder
- 1 teaspoon Coriander Powder
- 1 teaspoon Garam Masala Powder
- 1 teaspoon Sugar
- 1 teaspoon Salt or to taste
Instructions
- First, boil duck eggs for 8-10 minutes. Then, cool them under running water and peel off the shells.
- Next, peel the potatoes and cut them in half. Roughly chop the onion and tomato.
- Sprinkle about a third of the turmeric powder, red chili powder, and salt over the boiled eggs and potatoes, making sure to rub it in well.
- Now, heat oil in a wok and fry the boiled eggs until the outer layer becomes crunchy and brown.
- Afterward, fry the potatoes until they turn golden brown, then remove them from the oil.
- Use the remaining oil to temper dried red chili, whole cumin seed, green cardamom, and a bay leaf.
- Add the chopped onion and fry until it becomes clear.
- Add the chopped tomatoes and cook until they soften. Then, add the ginger and garlic paste to the mixture.
- Cook for about 2 minutes, or until the oil separates.
- Create a paste using the remaining turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala powder with half a teaspoon of mustard oil.
- Add this spice mix to the wok and cook for another minute.
- Finally, add salt and sugar to taste.
- Carefully place the fried eggs on top.
- Then, pour in 3 cups of water.
- Turn the heat down low and let it simmer for 5-6 minutes, or until the potatoes are completely soft. Stir in a touch of ghee for richness.
- Serve this delicious Hansher Dimer Dalna with a side of fluffy steamed rice.
Notes
- This recipe is for duck egg curry, but feel free to use any type of egg you like.
- I've used ghee here, but you can easily leave it out.
- Adjust the curry to your desired consistency. While you can make it as thick or runny as you prefer, keep in mind that dalna is usually a semi-gravy type of curry.
