To make delicious pancakes, start by combining flour, salt, and baking soda in a bowl. Mix these dry ingredients well with a spoon. For a lighter texture, sift the flour mixture once or twice.
Next, melt a tablespoon of butter and combine it with room-temperature milk.
In a separate bowl, add this milk and butter mixture to the flour mixture, along with honey and an egg.
Gently stir everything together with a spatula until you have a smooth batter without any lumps.
Stir in a splash of vanilla for extra flavor.
Now, melt the remaining butter in a non-stick pan over low heat.
Pour about three tablespoons of batter onto the melted butter. Use the back of a spoon to spread the batter into a nice round shape. Cook for about a minute, until the bottom is golden and bubbles start to appear on the top.
Cover the pan with a lid and continue cooking for another minute.
Remove the lid and flip the pancake to cook the other side until it's also golden brown.
Remove the pancake from the pan and repeat the process with the remaining batter.
Serve your warm pancakes topped with a drizzle of Dulce de Leche and some fresh fruit pieces.
