For the best cookie dough, make sure all your ingredients are at room temperature. While you're waiting, preheat your oven to 180 degrees Celsius for 10 minutes.
Now, sift together the whole wheat flour, baking powder, and baking soda twice. Mix in the oatmeal, and set this dry mixture aside.
In a separate bowl, whisk the eggs and vanilla essence together at medium speed until the mixture becomes light and frothy. (I used a hand blender for this!) Then, add the vegetable oil and continue beating for about a minute.
Next, add both the brown sugar and powdered sugar and mix until the mixture is creamy and the sugar is fully dissolved.
Gradually fold the dry ingredients into the wet ingredients in three parts, mixing until just combined. Finally, stir in the chocolate chips.
The finished dough should be soft, but not too sticky, and easily handled with a spoon for baking.
Use your fingers to gently flatten each dough ball into a cookie shape, just like in the picture.
Bake the Oatmeal and Chocolate Chip Cookies at 180 degrees Celsius for about 12-15 minutes. Mine took 15 minutes to bake perfectly.
Once they're done, transfer the cookies to a wire rack to cool completely. Then, get ready to enjoy those crunchy and delicious treats!
