Labra Torkari Bengali mixed-veg cooked without onion and garlic and is believed to be loved by none other than Shri Chaitanyadev himself!

Fact

Labra Torkari is still cooked at the Nabadwip Thakurbari. The word came from the Bengali word Alabu (অলাবু).

Ingredients

Potatoes

Sweet Potato

Radish

Eggplant

Broad Bean

Pumpkin

Spinach

Ridge Gourd

Cauliflower

Tomato

Coconut paste

Step 1

Make Bhaja Moshla using cumin seed, bay leaves, red chili and fennel seed

Veggies needed

Temper oil with Bay leaf, red chili, and also panch phoron and asafoetida

– First add potatoes and sweet potatoes followed by other veggies except spinach and coconut paste

Add spices- turmeric powder, red chili powder, cumin powder, sugar, and also salt

Add coconut paste

cook till the veggies soften; cook for 15-20 minutes
