Description
This simple Bengali Aloo Beans Bhaja is made with fresh green beans and potatoes, which are coated in a blend of aromatic spices and then air-fried to perfection. The result is a crispy and delicious dish that you can serve as part of a comforting Bengali meal.

- 6 medium-sized potatoes
- 200g green beans
- 1 Tsp. salt
- 1 Tsp. turmeric powder
- 1 Tsp. red chili powder
- 1 Tbsp. vegetable oil (optional)
Instructions
- Thoroughly rinse 6 medium-sized potatoes .
- Rinse 200g of green beans as well.
- Peel the potatoes and cut them into medium-thin strips.
- Remove the ends of each french bean and lice the beans into strips, preferably in a slight rhombus shape.
- Once again, rinse the sliced vegetables.
- Now lace the beans and potatoes in a bowl.
- Mix in one teaspoon of salt, one teaspoon of turmeric powder, and one teaspoon of red chili powder.
- After mixing, add one tablespoon of your preferred vegetable oil.
- If you are using an air fryer like I did in this recipe, you can omit the oil entirely.
- Transfer the vegetables to the air fryer basket.
- Here's a trick I'd like to share: cover the air fryer pan with a piece of aluminum foil before transferring the veggies. This way it will be easy to clean the air fryer basket after using it.
- Proceed to air fry the vegetables for a total of 30 minutes at 180 degrees Celsius (around 350- 356 F).
- To fry the aloo beans bhaja perfectly mix in with a fork after 15 minutes of air frying and complete the remaining 15 minutes.
- If necessary, continue air frying the vegetables for an additional 10-15 minutes at 180 degrees celsius.
- The greatest advantage of using an air fryer is that you can step away and let it do its job without the need to stir or constantly monitor.
- Once finished, transfer the fried potatoes and beans to a bowl and remove the aluminum foil.
- The air fryer pan requires only a simple wash as nothing sticks to it.
Notes
- To remove excess moisture while marinating the veggies, I use a perforated bowl.
- I personally use just one tablespoon oil while making the beans aloo bhaja in an air-frier. I must mention that if you were to shallow-fry this amount of potatoes and beans in a regular pan, it would require at least four to six tablespoons of oil. However, by using an air fryer, we can avoid this.
