Ingredients

  • Spinach: 20 g finely chopped
  • Carrot: 20 g small dice
  • French Beans: 20 g small dice
  • Potato: 30 g small dice
  • Quinoa: 40 g boiled
  • Salt: to Taste
  • Chopped Onion: 10 g
  • Vegetable Stock: 1 Litre
  • Olive Oil: 100 ml
  • Pesto: 20 g

Seasoning:

  • Salt
  • Pepper

Instructions

  • Heat Oil in a pan and add garlic and fry till garlic turns to nice golden brown colour.
  • Add chopped Onions and fry till those become translucent.
  • Now add all the vegetables except spinach and cook till those become soft.
  • Add vegetable stock and bring the soup to boil.
  • Add spinach and finally add boiled quinoa and Pesto to the soup and cook for some time.
  • Season the soup with salt and pepper and adjust the consistency using vegetable stock.
  • Serve Quinoa Soup hot.
