Quinoa Soup
A simple yet tasty Vegan Quinoa soup as shared by Chef Alejandro Cancino

- Spinach: 20 g finely chopped
- Carrot: 20 g small dice
- French Beans: 20 g small dice
- Potato: 30 g small dice
- Quinoa: 40 g boiled
- Salt: to Taste
- Chopped Onion: 10 g
- Vegetable Stock: 1 Litre
- Olive Oil: 100 ml
- Pesto: 20 g
Get Recipe Ingredients
Heat Oil in a pan and add garlic and fry till garlic turns to nice golden brown colour.
Add chopped Onions and fry till those become translucent.
Now add all the vegetables except spinach and cook till those become soft.
Add vegetable stock and bring the soup to boil.
Add spinach and finally add boiled quinoa and Pesto to the soup and cook for some time.
Season the soup with salt and pepper and adjust the consistency using vegetable stock.
Serve Quinoa Soup hot.
