Bacon jam is afamous condiment or jam prepared with bacon and and few selected ingrediants.
Heat and crisp 500g Bacon in 2-3 batches.
Strain from pan and discard entire lard except 1 tbsp.
Add butter to the pan and fry 2 chopped onion and 1 Tbsp. chopped garlic
Add 1 tbsp. chopped ginger and cook for a while
Now add 1/3 cup each of maple syrup, apple cider and also 1 tsp. each black pepper, salt and 3/4 cup coffee and cook
Meanwhile chop bacon and add, cook for 20 minutes.
Store the jam in an airtight container
you can store it for days
