Debjanir Rannaghar Youtube channel is an extension of the blog https://kitchenofdejani.com run by Debjani Chatterjee Alam. The blog is solely run by Debjani however, the youtube channel is joint collaboration and run by Debjani and her husband Mehebub Alam. Debjani is a financial analyst by profession and Mehebub is an Architect, both ate Bengali and from Kolkata. They both love and respect their food. Through this channel, they want to share video recipes of the already posted recipes from Debjani's food blog "Debjanir Rannaghar".

How about some stew with Ilish instead of the regular Ilish bhapa, Ilish paturi or Ilish bhaja or Shorshe Ilish?
Ilish Panikhola (also known as Sada Ilish) is a stew-like preparation of Hilsa cooked with a handful of ingredients. This curry is completely different than the spicier versions of Hilsa Curry we prefer in general. I have cooked it on different occasions including pop-ups and even for the people who have tried Bengali food for the first time. My blog is having the recipe for long and now the video recipe is here as well.
Before going further with the recipe of Sada Ilsih, let's talk about responsible eating. Ilish Maach aka Hilsa is famous across the border of both sides of Bengal and needless to say Bangli's love for Ilish is as famous as the fish itself. With love comes responsibility and it is our responsibility to support responsible eating of HilsaWe must remember our favorite Hilsa is in danger. Let us say no to Khoka Ilish ( fish size below 600g); we must save the small so that our future generation can at least taste and realize what beauty Ilish is..Let us restrict ourselves from purchasing Ilish Maach beyond the rainy reason!

Niramish Mangsho aka vegetarian meat curry! Oxymoron isn't it?
Let's find out through the video why the name is justified for this quintessential Bengali Mutton curry!
Mangsho cannot be niramish right? For sure, if you are a Bengali or you know Bengali language, the term Niramish Mangsho is nothing but an oxymoron. After all, we call Enchor aka raw Jackfruit gach pantha, the vegetarian meat. Then why this name? Well, in every dialect, there are a few phrases, which cannot be described by a word or a typical meaning. Niramish Mangsho is one such term. In Bengali cuisine, anything cooked without onion and garlic (and in few cases, without a few more ingredients) are termed as Niramish. As this particular mangshor jhol aka mutton curry is cooked without onion and garlic, we often refer to it as Niramish.

It is been long the readers of my blog and the viewers of my IGTV, as well as youtube channel, are requesting the video recipe of the Calcutta Biryani. It took me ten years to come up with the Kolkata Mutton Biryani post. Needless to say, I did not give much thought to the video recipe let alone the Kolkata Biryani Masala recipe.
Now that we are facing the lockdown to battle the pandemic of COVID-19, I have started sharing the recipes using easily available ingredients. When it comes to Biryani, we think that we need exotic ingredients, however, to cook a decent portion of Kolkata biryani we actually do not need exotic ingredients. In fact, some of the ingredients such as the essence can be kept for long. Keeping all these in mind, I captured the biryani video and this was the time I realized, I need to bifurcate the video. Else it will be a long one.
I divided the video into three parts, one for making Khowa at home; making Kolkata Biryani Masala at home, and finally making Calcutta Biryani at home. In this recipe, you are going to see how to make homemade Kolkata Biryani Masala.
