To make the Pork Meatloaf
- 500g Ground Pork
- 3 Eggs
- 2 cups Bread Crumbs
- 1 Onion
- 10 cloves Garlic
- 25g Rosemary
- 25g Thyme
- 25g Dill Leaves
- 25g Parsley
- 1 Tsp. Salt
- 1 Tsp. Cinnamon Powder
- 1 Tsp. Paprika
- 1.5 Tsp. Black Pepper
- 1 Tsp. Onion Powder
- 1 Tsp. Garlic Powder
To make the Glaze
- 2 Tbsp. Tomato Ketchup
- 2 Tbsp. BBQ Sauce
- 2 Tbsp. Mustard Sauce
- 2 Tbsp. Brown Sugar
Instructions
Process of making easy pork meatloaf at home
- In a mixing bowl, mix ground pork with three fresh eggs.
- Next, add a blend of seasonings as mentioned in the ingredients list - black pepper, salt, paprika, cinnamon powder, onion powder, and garlic powder.
- Now remove the leaves from the thyme and rosemary sprigs.
- Finely chop dill and parsley if using.
- Peel and roughly chop the garlic cloves.
- Grate the onion.
- Add both onion and garlic to the bowl.
- Thoroughly mix the pork with the spices and herbs until well incorporated.
- Now add breadcrumbs to bind the mixture into a dough-like consistency, as shown. You may refer to the video shown from my channel here to have an idea about the consistency.
- Meanwhile, Preheat the oven to 160 degrees Celsius
- Line a baking tray with parchment paper, lightly oiled, and transfer the prepared meat mixture, shaping it into a loaf. Ensure the sides of the tray remain clear.
- Bake the meatloaf for 15 minutes.
- Take it out for the next step.
- While it's in the oven, prepare a simple glaze of your choice to complement the dish.
- Mix the glaze ingredients as mentioned in the ingredients list to make the glaze.
- Generously apply the prepared glaze, ensuring it fully coats the loaf.
- Then, bake it at 160 degrees Celsius for 40 minutes.
- Once the baking is complete, take the meatloaf out of the oven and cover it with the juices.
- Finally, slice the meatloaf and serve it hot, either as part of a sandwich or as a generous slice accompanied by mashed potatoes or vegetables – enjoy the delicious meal!
Notes
- The eggs must be at room temperature. I prefer using fresh herbs.
- You can use dried herbs if fresh herbs are not available.
- Some prefer to bake the meatloaf for 40 minutes initially, followed by 15 minutes in a second phase. However, I prefer the opposite approach, as it allows the flavors to blend more effectively.
