Description

The Two in One Sondesh I made on Nabami, was prepared from homemade Chana & flavored with Vanilla & Strawberry & shaped using the traditional terracotta mold.


Ingredients

To make Chana or Cottage Cheese:

  • Full Cream Milk: 2 Litres
  • Lemon: 2

To Make Two in One Sondesh:

  • Chana/ Cottage Cheese: prepared from two liters Milk
  • Powdered Sugar: 5 Tbsp.
  • Vanilla Essence/ Extract: 2-3 drop
  • Strawberry Jam/ Strawberry Compote: 4 Tbsp.
  • Condensed Milk: 6 Tbsp.
  • Ghee: 1 Tsp. (to grease the mold)


Instructions

To make Chana or Cottage Cheese:

  1. Boil milk in a deep bottom pan and reduce to 1/3.
  2. When the milk is reduced in quantity simmer the flame and add lemon juice to the milk to curdle it.
  3. Once the milk starts curdling, switch the flame off.
  4. Cover the pan with a lid and leave that for 10 minutes.
  5. Strain the water from Chana/ cottage cheese using a strainer.
  6. Pt the Chana in the middle of a muslin cloth and tie the edges of the cloth to close it.
  7. Place something heavy (I have used my “Shil Nora / Shil batta”) for this over the Chana filled cloth.
  8. Leave it for 30 minutes to throw away excess water from it.
  9. After thirty minutes remove the cloth and there should be a block of cheese as the end product.

To make the Sondesh:

  1. Take the Chana/ Cheese block and mash it using the hand to make it lump free.
  2. Start kneading the Chana to make it soft.
  3. Mix Condensed milk with the softened Chana.
  4. Now separate the Chana into two parts.
  5. Take one part of Chana in a pan and start cooking it on low flame by adding 3 Tbsp. of powdered sugar and vanilla essence.
  6. Cook until the Chana solidifies a bit and leaves the edge of the pan. It took me around 7 minutes in low flame.
  7. Take the vanilla flavored Chana out on a plate.
  8. Start cooking the remaining Chana along with 3 Tbsp. of Sugar and Strawberry Jam/ Compote in low flame.
  9. The Jam I have used was having strawberry chunks and I used that as it is to give a body to the Sondesh.
  10. This portion took me around 10 minutes of cooking as it involved the Jam as well.
  11. Take the Strawberry flavored Chana out in a plate.
  12. Now grease choice of the Sondesh mold using little ghee.
  13. Take a half portion each of the flavored mixtures and shape it as shown in the picture.
  14. Remove from the mold carefully.
  15. Two in One Sondesh is ready to serve.

Notes

Two in One Sondesh can be stored for 2-3 days in the refrigerator.
The the amount of Sugar can be increased or decreased based on preference.
What amount of flavored Chana to be used for making a Sondesh is based upon preference.
If mold is not available Sondesh can be prepared just by shaping like a ball.
