A simple yet tasty Vegan Quinoa soup as shared by Chef Alejandro Cancino

- Spinach: 20 g (finely chopped)
- Carrot: 20 g (small dice)
- French Beans: 20 g (small dice)
- Potato: 30 g (small dice)
- Quinoa: 40 g (boiled)
- Salt: to Taste
- Chopped Onion: 10 g
- Vegetable Stock: 1 Litre
- Olive Oil: 100 ml
- Pesto: 20 g
Seasoning:
- Salt
- Pepper
Instructions
- Heat Oil in a pan and add garlic and fry till garlic turns to nice golden brown colour.
- Add chopped Onions and fry till those become translucent.
- Now add all the vegetables except spinach and cook till those become soft.
- Add vegetable stock and bring the soup to boil.
- Add spinach and finally add boiled quinoa and Pesto to the soup and cook for some time.
- Season the soup with salt and pepper and adjust the consistency using vegetable stock.
- Serve Quinoa Soup hot.
